Rotate part way, apply some rearward pressure,then twist out. A warm day, or garage helps, it softens up the rubber.
Note the position of the jubilee clips when first undoing. Always best to remove the slide first though.

Not sure about the callipers question, but the front forks you can service yourself. I think it was "Slider" who wrote out a flow chart on how to do the job, or there will be videos on wonder-web.
How much work did you intend to do to them?

What weight oil did you put back in? Did you measure the volume put back in or measure from the top down to oil surface?
Have you made sure the forks are square in the triple clamps?

What parts did you replace in the rebuild? you could try screwing the air screw inwards (richer) but it wont have a huge effect. You may have a partially blocked pilot jet. If the air screw doesn't help then buy a standard pilot jet and maybe the next size up and try that. +1 Also check the rubber ...

A magnetic drive fan is best, as their unaffected by water ingress, either a 50mm, or 75mm. Wire it directly into the ignition circuit, you can add an in-line fuse if it eases any fears about shorting out.

Hi, if you crack open the rad cap and there's water in there, the rads are full. These bikes are notoriously quick at boiling over. For serious off road most of us have fitted a 12v computer fan on one rad. Take the bike out for a short circular run around, then gradually increase the running time. ...

Hi, I don't know about your stature but, the MK1's are a little smaller in their overall dimensions. Some people end up having to fit bar risers to aleviate back aches.

I used to keep a spare secreted on the bike, just in case the keys went AWOL whilst I was out riding.

You can get all the bearings from a bearing factor shop like Simply bearings,but you'll have to measure yours first for the correct sizes. Option 2 is the only option that won't potentially bugger the new bearings.

Is the vid of three ended lane in Hampshire? Almost certainly the muddy water is the culprit, is / or was the little drain off hole clear on the gen side cover? They tend to get blocked easily?
