Engine dies off choke on my Mk 3

How do.

My Mk 3 doesn't want to run off choke, when its off choke and I open the throttle it just bogs down and dies.

I put it back on choke to get it going again and then it preceded to rev its nuts off. I turned the ignition off and still she revved.
After about 20 secs it died thank god , it scared me to death.

3 questions.........

What is causing it to die off choke, its as if it is flooding.
2. Why do the continue to run once the key is out.
3. Whats the best way of stopping it when it does rev its nuts off. Ive had a mk2 do this on me an all.

had this a couple of times on my mk2.strip the carb and clean the jets,float bowl and make sure that the air/fuel passages into the carb body are clear.its always been blocked jet that caused the problem for me
