If by rim locks you mean 'bead locks', then they just slot through the hole provided in the rim, and tighten-up fully when you've got the tyre back on fully and seated.
If there isn't a second hole in your wheel rim then you'll need to drill one out - no biggy, 10 or 12mm I think. I tend to put two rim locks on my rear wheel - one opp the valve and one just along from the valve.
Advisable to use some rim tape as well to cover the ends of the spokes, but carpet tape will do - just a pain to clean-up when your fitting a new tyre.
Regarding the tyre pressure - it depends where and when you'll be riding it. If there's a bit of road work required I find it's best to keep it at 10 or above (personal preference). If it's just off road it just depends on the conditions. You can take it down to 3-4 in the muck (just like trials) as long as you're not going for any big jumps or rocky steps.

Thanks, yeah i think there bead locks, metal things that cost about a tenner each.
Ive got 1 to go on the front and 1 on the back, is it advisable to get 2 as id imagine they can affect the balance of the wheel?

Wouldn't worry too much about wheel balance with off road tyres on - you'll never get em bang on and you'd lose the weights anyway eventually off-road.
I only tended to fit two to the rear as a throwback from my old trials days running really low PSI.
Before you try and fit both to the back, make sure they're the right size/width for the wheel. From memmory I think they tend to get supplied as 1.8 and 2.00 - correct me if I'm wrong - with the larger for the rear.
Cheers,
