Help - Chain Adjustment

I've spent time today trying to fit disc covers and new chain/sprockets, which I got from LT last week. Cost an arm and a leg. The covers were fitted without problems apart from having to drill and tap pads for the rear cover.
I have a 13t x 47t set up - the 'o' ring chain is too long and I'll have to remove a link, this should put the snail adjuster on mark '10' approx., so plenty of adjustment left.
But at this setting the rear wheel is too forward and traps the Splash Guard (sorry don't know proper description) against the swing arm.
Just wondered if this is normal, because when the bike is wheeled backwards the splash guard moves out between the wheel and swing arm. Not pretty!
Also, do you have any tips for removing chain link and fitting without a chain tool.
